Are there be any drawbacks in maintaining 500 ft./sec. for a LP10P?

Keep in mind that the factory setting is not universal as the factory must comply with the import regulations of many different countries. One example is Canada which imposes a 500fps limit on airguns. As a result, Steyr air pistols exported to Canada are set at the factory to a velocity which is less than 500 fps.
The only sacrifice with lower velocity is perhaps reduced efficiency of the compensator. I've group-tested my LP-10 and found it groups best with rifle pellets in the 485fps range. Each pistol is unique and will have its own optimum velocity.
