Hi I'm interested in purchasing the hammerli ap40 but was wondering wether or not it has enough grip adjustment because I like shooting with a dropped wrist.

AP 40 grip angle
The User Manual that accompanied my AP 40 states:
"The longitudinal angle can be adjusted within a range of 7 degrees." (Actually, it uses the degree symbol rather than the word "degree", but I don't know how to get that symbol into this message.)
There is no reference or base angle to which to tie this 7 degrees adjustment, so whether that will give you the amount of dropped wrist you desire is not clear. You may need to find someone with an AP 40 who will let you try the range of adjustment.
