Can anyone give me any advise on what I need to go from my Nitrogen regulator to my Morini and Walter air cylinders. I have the air cylinder adapters that use to fit my scuba or foot pump.

I'm an autocrosser too. How about that?
I'm not sure that such an adapter exists. The fill adapters that come with PCP pistols are DIN SCUBA thread. Commercial N2 tanks use CGA580 fittings. You'd have to find a DIN SCUBA to CGA580 fitting, and those may not be made on purpose, to keep people from filling SCUBA tanks with N2 and then killing themselves. I couldn't find one in ~15 minutes of googling. Plus, you'd probably want a regulator.
You may be able to make an adapter with stuff from this place:

They have a male DIN to female 1/4" NPT adapter. If you could find a female-female DIN200 fitting to connect this thing to the airgun fill adapter, you could then connect to a high pressure hose on a gas bottle regulator. Just make sure all the pieces are rated to 3000psi.
You might also look at http://www.airhog.com. They have quite a selection of fittings, hoses, etc. You also need to make sure that you have a regulator that will provide a 3000 psi output - you probably don't want one regulator and adjust between 3000 and 180 psi. The odds of eventually blowing up a tire with 3000 psi is too likely.
